Grilled Strawberries with Light Creme and Balsamic Glaze

Warm, lightly charred strawberries sit over a tangy cream made from Greek yogurt and light cream cheese. A thin ribbon of balsamic glaze, toasted almonds and a few basil or mint leaves turn a short ingredient list into a dessert that feels composed rather than merely assembled.

Serving size
1/2 plate (9 strawberry halves)

Ingredients

  • 160 g (2/3 cup) plain nonfat Greek yogurt
  • 15 g (1 tbsp) light cream cheese, softened
  • 1/2 tsp honey
  • 9 large strawberries, hulled and halved
  • 10 ml (2 tsp) sunflower or avocado oil
  • 15 ml (1 tbsp) balsamic glaze or reduced balsamic vinegar
  • 10 g (2 tsp) sliced almonds, toasted or raw
  • 1 tbsp very small basil or mint leaves

Method

  1. Whisk the yogurt, light cream cheese and honey until thick and smooth, then spread the mixture across a serving plate.
  2. Heat a grill or grill pan to medium-high. Brush the cut sides of the strawberries lightly with oil.
  3. Grill the berries cut-side down for about 4 minutes, just until strong grill marks appear and the fruit softens slightly.
  4. Arrange the strawberries over the cream. Drizzle with balsamic glaze and finish with almonds and herbs.

Cook’s tip

The berries should soften but still hold their shape. Very ripe fruit can collapse quickly on a hot grill.

Variation

If you do not have prepared balsamic glaze, reduce 60 ml (1/4 cup) balsamic vinegar in a small saucepan until lightly syrupy, then cool before using.
