Grilled Angel Food Cake with Strawberry-Rhubarb Topping

Prepared angel food cake becomes more interesting after a brief turn on the grill, where the cut surfaces toast and caramelize. A quick strawberry-rhubarb compote and a spoonful of light whipped topping supply the contrast of tart fruit, warm cake and cool cream.

Ingredients

  • 225 g (1 1/2 cups) strawberries, chopped
  • 90 g (3/4 cup) rhubarb, chopped
  • 100 g (1/2 cup) sugar
  • 90 ml (6 tbsp) water
  • 1 3/4 tsp vanilla extract
  • 1/8 tsp ground cinnamon
  • 1 prepared angel food cake, cut into 6 pieces
  • 180 ml (3/4 cup) low-fat whipped topping
  • Cooking spray

Method

  1. Heat a grill or broiler and lightly coat the rack or pan with cooking spray. Position the food about 10 to 15 cm (4 to 6 in) from the heat.
  2. Combine the strawberries, rhubarb, sugar, water, vanilla and cinnamon in a saucepan. Cook over medium heat until the mixture just begins to boil, about 5 minutes, then remove from the heat.
  3. Toast the angel food cake over the cooler edge of the grill, or under the broiler, for about 1 to 3 minutes per side until browned.
  4. Serve each slice with 60 ml (1/4 cup) strawberry-rhubarb topping and 2 tbsp low-fat whipped topping.

Cook’s tip

Angel food cake browns very quickly because of its sugar content. Keep it at the cooler edge of the grill and watch continuously.

Variation

If outdoor grilling is inconvenient, use the broiler as the Mayo source suggests; the goal is surface browning rather than heating the cake through.
